Ingredients (200 grams)

Matcha

6g

Fresh cream

50ml (milk fat content 35-40%)

Unsalted butter

15g

White Chocolate

125g

Honey

5g

Brandy (optional)

Small quantity

How to make it


1. Finely chop the white chocolate and soften the butter by bringing it to room temperature.
2. Place the cream and honey in a small saucepan and heat over low heat. Turn off the heat just before it boils.
3. Add the chopped white chocolate and butter to the warm cream and mix with a rubber spatula until smooth.
4. Sift the matcha into the tea strainer and mix carefully until smooth. You can add a little brandy if you like.
5. Place wax paper in a tray and pour in the chocolate. Smooth the surface with a rubber spatula and chill in the refrigerator for 4 to 5 hours until hardened.
6 Once cooled and solidified, cut into desired size pieces with a knife. To finish, sprinkle matcha over the top using a tea strainer and it's done.
